Cod and Chorizo One Pot Wonder

Aside from the traditional fish and chips, this is my favourite fish dish...it's so simple to prepare and tastes wonderful! The flavours in this dish work so well together and along with the sauce makes a fantastic family meal that deserves some good bread to dunk in the sauce :))

Cod and Chorizo One Pot Wonder

2 tbsp olive oil 
100g cooking chorizo (sliced)
500g new potatoes , sliced 
White Wine
2 skinless thick Cod fillets
Large handful Green beans
Large handful cherry tomatoes
50g Manchego cheese (cut into chunks) optional
Rustic bread , to serve
 
Add olive oil to a large lidded frying pan and heat on a medium/high heat. Tip in the chorizo, fry for 2 mins, then add in the potatoes and green beans and some salt and pepper. Splash over 4-5 tbsp White wine, cover with the lid tightly, then leave to cook for 10-15 mins until the potatoes are just tender. Move them around the pan a bit halfway through.

Season the fish well and Lay the fish on top of the potatoes, add the cherry tomatoes and manchego cheese (if using) and pour in another good glug of white wine.

Put the lid back on and leave to cook for 5 mins, or until the fish has turned white and is flaky when prodded in the middle. 

Serve with some rustic bread to dip in the wonderful sauce
