Halloumi and Vegetable Kebabs with a Mint and Chilli Marinade

Finally we have some nice weather and that means BBQ time :)) Yesterday me and my son had been out all day so I had already marinated some lamb chops in the morning and needed something quick and easy to accompany it for the BBQ and my Halloumi and Vegetable Kebabs with a mint and chilli marinade is perfect :))

Halloumi and Vegetable Kebabs with Mint and Chilli Marinade

150g Halloumi
Array of veg - aubergine, courgette, peppers and mushrooms 
50ml Olive oil (please feel free to add garlic oil as well if you want)
1-2tsp dried chilli flakes
8 fresh mint leaves (you can use dried) 
Salt and pepper
Skewers

Pour the oil into a bowl and add the chilli flakes, mint and a little salt and pepper and mix well.

Cut the Halloumi into nice large chunks about 2.5cm x 2.5cm
Cut the vegetables into nice large chunks as well

Place the Halloumi and veg on the skewers alternating them as you go.

Brush some of the marinade on the skewers and leave for around 10 minutes 

Heat either a griddle or BBQ and brush the skewers again with the marinade

Place the skewers on the griddle (BBQ) and cook for around 10 minutes turning occasionally to cook, brushing any marinade you have left or oil on them as they cook. You don't want the veg to be too soft so don't cook for too long you want them to have a bite.

Serve with your favourite meat...I served mine with lamb chops marinated in garlic, rosemary and honey and some new potatoes :))

Perfect BBQ food :)
